Epson offers various documentation for its products. You can access it using a browser. typically, if you have Epson Scan installed, switch it to Full Auto Mode then press SCAN. The File Save Settings window will open, then you can choose the output file as show in the image below.

Note: It doesn't matter if the documentation link is for another device, because the Epson Scan is the same.
